Students are led by professional cooks in the preparation of dishes, tastings and visits of farms.The Tuscan Maremma is one of the Italian regions in which the food-industry tends more towards organic production processes and finds a natural ally in the most ancient tradition of Mediterranean cuisine and wine making. The students attending this course will be able to enter the kitchen of traditional Italian families and prepare, with their own hands and under the guidance of expert cooks, traditional dishes (from starters to desserts), and to taste these dishes with some of the best Italian wines.
What is included in the programme:
- 4 hours group lessons (Monday to Friday, 20 hours per week);
- 2 cultural outdoor activities in groups (duration depending on distance and kind of activity, 2-5 hours each);
- 1 full day excursion in groups at the first weekend (8-12 hours);
- 3 culinary activities (alternating wine, oil and bio food tastings and visits to farms) per week. The student is led by professional cooks in the preparation of dishes, during tastings and visits of farms. The student is accompanied in a private car by a teacher who acts as a cultural and linguistic mediator and provides the necessary point of connection between school and restaurants, Italian families and farms where activities take place. Duration depends on type of activity and distance.
The culinary activities may consist of:
- Samples of traditional food, followed by dinner and conversation with the family in an Italian home;
- Visit of agricultural food companies in the Maremma with the possibility of typical dinners, tastings of food and local wines;
- Visit of the fish farming plant of the fishermen in the Orbetello lagoon or assistance at the arrival of the fishermen, as well as with the selection and auction sale of the fish in the Ports of Monte Argentario, followed by dinner in a typical seaside restaurant.

The focus of the content during Italian lessons is on the structure and rules of grammar, practical exercises such as forming sentences, games, quizzes and written texts, expanding vocabulary, idioms, reading texts on the various topics of Italian culture such as cooking, wine, music, cinema, role plays, acted out everyday situations, conversation and the use of different methods of communication, direct listening, analysis of the different faces and facets of Italy.
For intermediate and advanced participants active newspaper readings are used. Discussions about topics from the world of art, culture, current affairs, politics and society. As a rule, the 4 hours daily are divided into 2 hours of grammar and 2 hours of conversation, so the language student gets to know and immerses himself in the 4 pillars of language optimally: speaking, understanding, reading, writing.
Cooking lessons are aimed at discovering Italian and Central European cuisine, perfect to immerse into the gastronomic savours and perfumes of multicultural Trieste. Classes are held at Lalla’s home , our Chef , and start at 17.00. The environment, though familiar , is equipped to carry out professional courses.
The program provides a general course in order to acquire the basic skills necessary to prepare authentic Italian and Tuscan dishes.
Students prepare a complete menu every time ( hand-made first course, one second course , two side dishes and
a dessert).
Sometimes the courses can be by theme ( first courses , main courses , vegetables, sweets, etc)
The course requires the active participation of the students who prepare with Lalla’s help , the best dishes of Italian cooking tradition.
